As long as it's on the rack it's fine, but when you put it in your pack it spoils. Unless you meant that it still spoils on the rack, in that matter, mine does not. I've got three racks going and I recently this morning a few hours ago left my main base for about a week looking for legends in SOA.

Just make sure you build a frame first, then a roof on top of it, and then the drier underneath it. Meat will never dry when it's raining, and even when it started drying - when the rain comes, the drying timer will reset.
